The aim of this study is to survey the literature on galactomannan extracted from algaroba, focusing on its structure, functional properties and food applications. The literature review highlights its benefits as a soluble dietary fiber, including glycemic control, cholesterol regulation, promotion of satiety and prebiotic effect. Comparisons with psyllium show functional similarities, as well as algaroba's advantages in terms of cost and environmental impact. The research reinforces the potential of galactomannan in the formulation of functional foods, in line with the growing demand for healthy and sustainable products.
