The cashew is a fruit sufficiently looked by its flavorful pulp, presents one high vitamin text C and also in you leave minerals. The high indices of pollution reached by the energy use fossils are sufficiently preoccupying in the present. Actually, the development of new technologies that can use renewable energy sources is quite important. Solar drying of cashew pulp using solar drying with both direct as well as indirect radiation has been used as a feasible alternative in small farmers once producers can minimize loss as well as add-value for theirs products using this technology. Cashew can be used to obtain dehydrated products minimizing the waste that account for up to 94%. Results showed that lower drying time was obtained using a lower cashew pulp layer.
