Thus, the search for a working environment with tools that provide a good operation quality is one of the factors that help the development of a competitive excellence environment at the companies aiming at aggregating value to quality market products. Customers have become more and more interested in products within specific patterns. Organizations have planned market strategies to stay at the top of the clients’ preferences. Using quality tools such as Histogram, Control Cards, Ishikawa Diagram and the Five Whys, it is possible to keep processing variables under control. This study aims at analyzing the weight of Wafer Straws at a Food Industry in the city of Macaiba/RN. It is also possible to obtain an investigative and statistical analysis using the Control Cards and the Ishikawa Diagram, respectively. Results of variables analysis show that the process is not within the statistical control pattern.
