In this context, the Food Safety System Certification (FSSC) 22000 scheme was created to validate organizations' commitment to food quality and safety. This validation is conducted through an analysis of compliance with the requirements proposed by the scheme. In its 6.0 version, the scheme added new requirements based on technical and market demands. The present study aimed to investigate the Food Safety Management System (FSMS) of an ice cream cone manufacturing industry, understand which new requirements it currently meets, and what needs to be done to address non-conforming requirements. To achieve this, the current context of the organization was studied to understand its capabilities regarding the new requirements proposed by the FSSC 22000 scheme. An analysis was conducted using the GUT Matrix methodology to prioritize the relevant requirements for the organization and develop action plans through the 5WH1 methodology, with the aim of proposing resolutions for non-conformities or improvements to conforming requirements. Out of all the new requirements in the FSSC 22000 scheme, 48 of these items required regularization or improvement. To address this, 26 plans were created proposing actions to ensure all requirements are compliant.
