The objective of the study was to evaluate the antioxidant and immunomodulatory properties of Allium cepa L. extract and Smethylcysteine sulfoxide in rats with experimental diabetes. Method: 35 Wistar rats with experimental DM were used and divided into: CG: control group; STZ-DB: group of diabetic rats induced by streptozotocin (STZ); STZ-EAC: streptozotocin (STZ) - treated diabetic rats treated with Allium cepa L extract; STZ-SMCS: Streptozotocin (STZ) -treated diabetic rats treated with S-methyl cysteine. Allium cepa L. extract (400mg / kg body weight) and S-methylcysteine (200mg / kg body weight) were administered daily for 30 days. Results: The results were expressed as Mean (Standard Error). The STZ-EAC and STZ-DMSM groups had the lowest TG values: 97,5 (20,0) mg / dL and 79,2 (19,1) mg/dL, p <0.05, respectively; and VLDL 12,3 (4,0) mg / dL and 15,8 (3,6) mg/dL, p<0.05, respectively, when compared with STZ 170,0 (20,0) and 32,4 (5,4) mg/dL. Mean values of fasting glycemia were lower (524,5 (9,3) mg/dL, p<0.05) in the STZ-SMCS group, compared to STZ (700,4 (13,9) mg/dL). An increase in the concentration of IL-10 (1.004,3 (169,3) pg/ml, p<0.05) was observed only in the STZ-DMSM group, when compared to the STZ group (393,7 (21,2) pg/ml). In the liver, there was reduction of hyaline corpuscles in the STZ-EAC and STZ-DMSM groups, as well as protection against atrophy of the pancreatic islets. Superoxide dismutase activity was elevated in the STZ-EAC groups (327,3 (56,4) UA/min/mg prot, p<0.05) and STZ-DMSM (409,9 (77,8) AU/min/mg prot, p<0.01), compared to the STZ group (109,2 (24,5) UA/min/mg prot.) The same effect was observed with catalase activity. Conclusion: Allium cepa L. extract and Smethylcysteine sulfoxide can improve the metabolic profile in DM, alleviating oxidative stress in the liver and aiding in the inflammatory response.
