Acesso em: 25 jun. 2024.2357-7894https://repositorio.ufrn.br/handle/123456789/63984Objective: To evaluate the meal offered in food services inserted in the Popular Restaurants Program of the State of Rio Grande do Norte, in front of the guidelines for the promotion of a healthy eating in public equipments of Food and Nutritional Safety (SAN in Portuguese). Method: This is a cross-sectional descriptive study in four popular restaurants in 2017. The research included: 1. Documentary analysis (from the contract reference term and recognition of the standard of the menus and food preparation datasheets); 2. Measurement in loco (Identification of serving utensils, homemade measures and weighing of portions) 3. Observation not participating in a meeting of the management team and of technicals responsible for the food services. Results: There was a frequent supply of foods or preparations with ultraprocessed ingredients (more than three times a week) and lack of standardization of the utensils used for the food portioning. It was not observed educational activities aimed at promoting healthy eating for the users of the Popular Restaurants.
