This work aims to identify whether the aforementioned products comply with current legislation that deals with nutritional labeling. The study is quantitative and exploratory in nature; was carried out in a unit of a supermarket chain located in Currais Novos, RN. 69 products were catalogued, of which 68 presented the nutritional information table. However, 33 of these products omit to declare total and added sugars, 30 do not declare nutritional information for 100 grams, 11 should have front labeling indicating “high in saturated fat” and 1 should indicate “high in sodium”. Regarding nutritional claims, 4 products presented non-conformities. 24 items had adequate 4 front nutritional labeling. It was also identified that 58% of the products analyzed had an excessive sugar content, 31% sodium and 55% saturated fats, which are worrying values due to possible changes in the lipid profile, metabolic syndrome and obesity. In short, it was not possible to establish this relationship with the analyzes carried out, highlighting the need for studies that focus on characterizing the average portions and frequency of consumption of bakery products, especially biscuits and biscuits, as well as carrying out studies that analyze the manufacturing and expiration dates, with a view to identifying whether products manufactured after the period in which the legislation came into force are in compliance.Attribution 3.0 Brazilhttp://creativecommons.org/licenses/by/3.0/br/UltraprocessadosNutriçãoRotulagembachelorThesis
