However, several studies highlight the health risks associated with these environments, such as the lack of adequate structure, low knowledge of stallholders about good handling practices and little supervision, with these being places prone to the spread of diseases, especially waterborne and foodborne diseases. This study evaluated the microbiological quality of chicken cuts sold at the fair in the city of Santa Cruz-RN through the count of mesophilic aerobic bacteria. The samples used were fresh cuts of chicken thigh, purchased at the street market in Santa Cruz-RN, being purchased separately from 3 different stalls and on 4 different days. The method used in the analysis was standard plate counting. The results of the analyzes varied between 1.4 x 104 and 8.4 x 105 CFU.g, therefore, of 12 samples analyzed, 7 are above the limit of 105.
