Araújo, Fábio Resende deNogueira, Gerlane Karine Bezerra2016-07-072021-09-202016-06-09https://repositorio.ufrn.br/handle/123456789/34760This research aims to analyze the difference of the sanitary quality of Food and Nutrition Unit in municipal schools in Santa Cruz (RN) before and after a systematic intervention and trace the profile of the school food handlers. It was seen that most food handlers are female, aged 50 to 60 years have not completed elementary school, is one minimum wage income, exercises the function of service above 20 years are gazetted. We evaluated 11 units, which all showed it was seen that high health risk before the intervention, and these three went to regular health risk after the intervention. Of the aspects evaluated, the item received had the highest percentage of adequacy in both moments, while items related to handlers, processes and products, and environmental hygiene reached the lowest prevalence of adequacy. Comparing the results of the final score, there was a positive and significant improvement (p = 0.003), since the items showed a significant change (p = 0.02) were processes and production and environmental hygiene.
