These products have high added value and unique characteristics of flavor, texture, appearance and aroma, meeting new demands for differentiated products. Lemongrass, a popular medicinal herb, is known for its effective therapeutic properties in the treatment of various diseases. Dulce de leche is widely consumed for its sensory characteristics, and the search for innovative products in this area is a growing trend. The introduction of lemongrass into dulce de leche offers a diversity of flavor, freshness, and potential therapeutic and medicinal properties, in addition to differentiated organoleptic characteristics, serving the dairy derivatives market. This study aims to launch new products on the market, creating two types of milk sweets - one based on bovine milk and the other based on goat milk - both incorporated with lemongrass. All stages of the commercial-scale process are presented, including mass and energy balances, economic analysis and experimental characterizations.
