The methodology used in the research was qualitative, being an action research in the meat processing unit of the city of São Vicente-RN. As results, the study revealed that the slaughterhouse is a complex system that involves many inspection agencies, in which most of the times do not exercise due, it was observed that the municipality provide an expensive service for a small portion in particular, which could cost all operational costs Finally, the study concludes that the production process in the Municipal Slaughterhouse is a process that presents the minimum of requirements of the legislation in force, since it requires the competent authorities, the careful perception of all conditions inherent in the process.Attribution-NonCommercial-NoDerivs 3.0 Brazilhttp://creativecommons.org/licenses/by-nc-nd/3.0/br/AbatedouroAbattoirManipulaçãoManipulationCarnesMeatbachelorThesis
