At the state level the flying fish stands out as an important fishing resource, mainly in the municipality of Caiçara do Norte. However it is still considered a commodity of little value, which discourages its fishing and consequently, its commercialization. In view of this scenario, this study had as its objective the elaboration of Mechanically Separate Meat of flying fish specially destined the assembly and sale of Hot fishes. The project outlines the steps necessary for its production, presenting flowcharts, process descriptions, layout, mass and energy balances, and cost analyzes, which proved the viability and profitability of production. The fish of the flying fish was submitted to sensory analysis, through the acceptance test and purchase intention. It presented satisfactory results in relation to the attributes analyzed and a purchase intent of 86.4% among the tasters.
