For this, there are several techniques that guarantee continuous improvement, increased profit and reduced waste. Therefore, the study has as main objective to analyze the critical business process of a bakery based on the philosophy of Lean Manufacturing - Lean production, with the addition of the BPM methodology - Business Process Management. The research is applied, considering that the object of study is a real company, and the purpose is to find solutions to concrete problems in its daily life. In addition, the research was classified as a case study, based on a semi-structured interview applied in the company, and through qualitative analysis. Regarding the results obtained with the research, it was possible to identify eleven bottlenecks in the bread making process in the bakery, such as, for example, the inadequate space, the absence of a technical sheet and the lack of bread making technique. In addition, Lean waste generated by these bottlenecks has also been identified.
