In this context, a popular candy in Brazil “doce de leite” (milk cream) is produced with water soluble cashew nut extract stands out for it’s rich flavor and known nutritional functionalities. The present work aimed to produce a vegetable milk cream (DLV) without the addition of animal-derived ingredients and on a commercial scale. The theoretical study addressed various topics, such as the development of the stages of production of DLV, the description of the necessary machinery, the elaboration of a process flowchart, the mass and energy balances of the main stages, the creation of a nutritional table and product labeling, the development of the factory layout, and the proposal of a wastewater treatment plant (ETE). Additionally, a brief economic feasibility study was conducted. The mass balance analysis indicated that a production batch occurring in 2.18 hours generates 55.56 kg of DLV, resulting in 463 units of 120g each per batch. For each batch, the change in the internal energy of the system (∆U) is 6,087.65 kJ. Cashew-based milk cream is innovative in growing market, with a popular and abundant raw material in the Northeast region, making the production cost lower and more attractive, in addition to diversifying the range of plant-based products.
