This study aimed to produce bioopolymers of gelatin and bentonite clay for use in active packaging of food. Experimental planning used the box-behnken type design for formulation of films, which were characterized as to the thickness, moisture content, water absorption capacity and water solubility. For the analysis of the results was applied the statistic test ANOVA, considering p <0.1. The results of moisture tests (33.77–91.01%), water absorption capacity (80,29–178.89%) and solubility (63.02–94.19%) were satisfactory according to the literature, but the thickness did not present values with statistical significance. Thus, the simultaneous optimization of significant results generated a film formulation based on gelatin and bentonite of 15% gelatin (m/v), 18.7% glycerol (v/v) and 7.5% bentonite clay (m/m; calculated by the mass of gelatin) as ideal for application as active food packaging.
