The increase in demand, the need to take this product to regions that do not have green coconut production, facilitate transportation and reduce the amount of garbage accumulated in cities has led to the industrialization of green coconut water, a viable and growing activity. In this work will be presented the production process of refrigerated and frozen coconut water. A lay out for the industry was created to exemplify how the process of coconut water industrialization would be. This is a small industry, which produces 1,000 PET bottles of 350 ml per day, and to meet this daily requirement would require an average of 1,400 kg of fruit.
