Temperature, light, noise and ergonomic factors were assessed at the unit, using, respectively, a digital globe thermometer, a light meter, a decibel meter and a measuring tape. High noise levels were observed in all sectors, except in the distribution/collection of containers area. Levels of inadequate lightning were registered in the majority area. Thermal discomfort was observed in the pans and trays washing area, in the distribution and collection of containers and around the cooking area. The assessed ergonomic factors showed to be inadequate.
