With that, the NOVA Classification of foods was published, grouping them into four groups, according to their level of processing. The present study aimed to relate food consumption using the NOVA system with histopathological staging in individuals with thyroid cancer (TC). For this, the food consumption of the individuals was evaluated using 24-hour recalls (R24H) collected in up to three moments and the food was classified according to the NOVA system. To assess nutritional status, the variable Body Mass Index (BMI) and percentage of body fat (BF) were used. Histopathological analyzes were performed by pathologists and histopathological staging was classified according to the 8th edition of the TNM classification and staging system. Statistical analyzes were performed using the Mann-Whitney and Kruskal-Wallis tests, using the Statistical Package for Social Sciences (SPSS) v. 29.0, with p <0.005 considered as significant. The sample consisted of 94 patients, 80.85% adults and 19.15% elderly, 25 with benign CT and 69 malignant, predominantly female (86.17%) and median age of 48 (18 - 87) years. Most participants were overweight and had a high percentage of body fat. No significant associations were found when analyzing the food groups consumed among individuals, with regard to malignancy (p > 0.05). As for the consumption of ultra-processed foods and tumor staging, it was observed that individuals in more advanced staging had slightly higher consumption of ultra-processed foods than in the initial stages, but this was not statistically significant (p = 0.424).
