Handling surfaces, which are in direct or indirect contact with food, contribute to the occurrence of these diseases. Thus, the objective of this work was to evaluate the hygienic-sanitary quality of the food handling surfaces of the canteens of the central campus of the Federal University of Rio Grande do Norte (UFRN), Natal / RN. The study was cross-sectional and was carried out in eleven canteens located on campus of the UFRN from February to May 2016. By means of the Swab technique, 11 samples of cutting boards were collected for microbiological analysis of Coliforms at 45 ° C and Aerobic Mesophilic Count. The presence of coliforms at 45 ° C in 63% and of aerobic mesophiles in 73% of the samples evaluated, revealed contamination of the cutting boards used in food preparation. The results of the analyzes ranged from <3.0 to> 1100 NMP / 50cm2 for coliforms at 45 ° C and from 18 to 4600 UFC / 50cm2 for aerobic mesophilic bacteria.
