It was concluded that chitosan and its derivatives are becoming very attractive for a wide variety of applications in many fields. Its interaction with metal ions by the chelation mechanism allows chitosan derivatives to be an alternative to traditional water treatment processes. In the medical and pharmaceutical field, chitosan derivatives can be applied as analgesics to animals, wound healing improvers and devices for the controlled release of drugs. In the food and agriculture sector, chitosan derivatives can be applied to the preservation of food, packaging material for the conservation of these and increasing the shelf-life of fruits in the post-harvest.
