Among the innovations in this sector, dermocosmetics stand out, being products that have assets and/or substances that provide benefits to the skin. In this work we studied the drying of beet by different methods, aiming to obtain powders with suitable characteristics for later application in cosmetics, since this vegetable, in addition to natural pigments, has many important vitamins and bioactive substances that can contribute to skin health. Two drying methods were studied, in spouted bed and foam layer, foam-mat. In the foam-mat process, beet pulp (without peel) was prepared with the addition of Emustab® as an emulsifying agent, the foam being produced by mixing it in a domestic mixer. Pulp and foam density analysis were performed, determining a volumetric expansion of 560.4%. The foam was dried in an oven with air circulation at 70 °C and the powder product was obtained, which presented a thick texture, with a grain aspect, which suggests its later application in an exfoliating cosmetic product. In the spouted beet extract drying, corn starch in two concentrations were used as an adjuvant in order to evaluate its effect on the drying. For characterization of the extracts, analysis of moisture, total solids and soluble solids were performed. In the obtained powder, analysis of humidity, water activity and hygroscopicity were performed. There were no significant differences in the characteristics of the powders that were not hygroscopic, with low humidity and water activity below 0.6. As for the aspect, they presented light and velvety texture, suggesting subsequent application in a blush. In the present work, the pretreatment of beet extract by anaerobic fermentation was also studied, with the purpose of concentrating the bioactives and minimizing the effects of the high concentration of sugars present in the beet on the spouted bed drying. However, it was not possible to dry the fermented extract.
