High consumption of ultra-processed foods (UPF) is one of the potential factors contributing to increased risk for cognitive decline and dementia. The aim of this work is to establish a systematic review protocol to examine whether there is an association between the type of food processing and cognitive decline and dementia in adults and the elderly.The present protocol for the systematic review was developed in accordance with the recommendations of the Preferred Reporting Items for Systematic Review and Meta-Analysis Protocols (PRISMA-P) checklist of 2015. A systematic literature search will be conducted in the Web of Science, Scopus, PubMed/MEDLINE, EMBASE, and Latin American and Caribbean Health Sciences Literature (LILACS) databases. Included in this review will be observational studies (cohort, case-control, and cross-sectional), employing a quantitative approach, which present in their results therelationship between food processing types and cognitive decline and dementia, without limitation of causes.
