The collective food sector is responsible for the production of a considerable number of meals in Brazil, having a great impact on the health of the population. Thus, the present study aimed to estimate the intake of pesticide residues in foods offered in menus of an institutional food service, in the state of Rio Grande do Norte. This is an exploratory and descriptive cross- sectional study. 20 menus of an institutional restaurant were analyzed. To estimate the intake of pesticide residues, the parameters of Maximum Residue Limit (MRL) and Acceptable Daily Intake (ADI) were used, and the Maximum Theoretical Daily Intake (IDTM) = (Σ (amount per capita x MRL))/ (body weight), according to parameters established by the World Health Organization. The results showed the presence of 298 authorized active ingredients for the foods present in the evaluated menus. In addition, the group that most contributed with the amount of active ingredients was the group of vegetables. Another result was the fact that the fungicide tebuconazole was the active ingredient that most frequently appeared in the analyses. Of the evaluated foods, those that exceeded the ADI were: poultry, meat, oranges, melons, rice and beans, that is, all foods that are part of the Brazilian diet. When evaluating the weekly lunch menu, it was found that the active ingredients of abamectin and carbosulfan had IDMT values above the ADI, characterizing exposure as na unacceptable risk.
